One of my contributions to our Eat for the Earth lunch.

Ingredients

100g cheddar cheese – finely grated.
100ml dry cider
Breadcrumbs from one slice of wholemeal bread
1 tbsp plain flour
1/2 tsp cayenne pepper
1 small french stick, cut in to rounds.

Method

Pour the cider in to a pan on a medium heat. Add the cheddar and stir well unti it melts. Add the breadcrumb, cayenne and flour and heat until thick and spreadable. Lightly toast the bread rounds on both sides and top with the cheese mix. Sprinkle over a little more cayenne if desired and grill until the cheese browns slightly on top.

Great as a canape or you can make bigger versions and serve as a take on a traditional Ploughmans lunch with chutneys, salad and apple slices.

    Awesome! I love the bacon and eggs! Maybe I will have to make these for grandad when he’s here this weekend. This lunch looks amazing – and for a very good cause as well! Perhaps I will visit our little farmers market today here in Oban – it may be small, but the venison burgers are amazing, as is the locally smoked trout!
