Soup Kitchen: For Sarah :) Potato, leek and cheese soup

My gluten free blogger friend Sarah has just had her wisdom teeth out. So this easy recipe is for her 🙂 We made this for dinner last night (I think all my soup recipes are gluten free actually 🙂 )

Potato, leek and cheese soup

Ingredients

1 tsp butter
2 leeks
3 large potatoes
500ml vegetable stock or water plus a little salt.
Black pepper
100g grated cheese (something melty like gruyere works best)

Method

Chop the leeks and potatoes and lightly sweat in the butter for 5 minutes. Add the stock, boil until the potatoes are soft. Blitz in the blender, season and pour into bowls, stir through the cheese so you just get little chunks of melted cheese 🙂
