Picnic adventures: Puttanesca-ish
“Whores pasta” for the Kirstenbosch picnic
Serves 2 – we actually served 6 as part of a multi-dish picnic
1 tin chopped tomatoes
1 onion – chopped finely.
2 cloves of garlic – chopped.
200g Black olives – chopped
1 tbsp capers – chopped
3 dried red chillies – chopped.
1 red pepper, sliced into long pieces.
Lots of ground black pepper
200g of the pasta of your choice.
Chop the onion and garlic and soften in a little olive oil. Add the tinned tomatoes, capers and black olives. Just before serving, add the red pepper to soften slightly. Season well with salt and pepper and mix into a few 100g of cooked pasta of your choice.
The traditional recipe uses anchovies but I find most people don’t like these so substituted them for capers on inspiration from the “salty” pizza that is popular here.
